I never measure when I make this so I'll do my best with the instructions .
You can either use fish heads or just use two filets of your favorite fish .
Pimento
Thyme
one Bay leaf
fresh carrots
potatoes peeled and chopped in quarters
Celery
Lime juice
salt and pepper to taste
a half stick of butter
water
Golden cooking wine
Instructions : clean and season fish
in a large pot , fill it about half full of water and bring it to a boil
add in seasoned fish , boil until white and flaky the add in one cup of cooking wine , pimento , bayleaf, butter and thyme . Reduce heat , simmer for 20 minutes then add carrots , potatoes and celery . Continue to simmer for 25 more minutes then add lime juice last .
This is a yummy lowfat treat .... very good with your favorite toasted bread and some jasmine tea !
