
1 stick of unsalted butter (melted)
1 cup of flour
1.5 cups of brown sugar
1 cup of white sugar
1 tablespoon baking powder
pinch of salt
1 cup of milk
4 cups of canned peach slices (reserve a little juice for juicier cobbler)
1 tablespoon of lemon juice
3 tablespoons of vanilla
Ground cinnamon
nutmeg (optional)
In a pan, lay out the peaches and sprinkle with cinnamon, nutmeg, and brown sugar. Add a little of the juice from the peaches - enough to make it syrupy. Add the lemon juice and vanilla. Set aside.
In a medium bowl, mix the rest of the DRY ingredients. Add milk and stir.
Add the dough mixture to the pan with the peaches - DO NOT STIR....
Drizzle the melted butter over the dough and sprinkle the top with additional cinnamon (garnish).
Bake in oven at 425 degrees... takes about 45 minutes, but keep checking dough for doneness...
Let cool for about a half an hour and serve with vanilla ice cream!
