Steaks in the Kitchen

This Urban lifestyle leaves me without my favorite cooking device THE GRILL... I have learned to master the perfectly cooked steak on a stove and wanted to share how to do this.
1) You can marinade a steak or you can always keep it simple with fresh ground pepper & sea salt. Most important ( I learned this froma chef @ Old Homestead Steakhouse) Bring your steak to room temperature before cooking. This prevents the outside from cooking too fast and the inside remaining cold.
2) Pre heat a Cast Iron skillet in the oven pre heated to 400. Bring Pan to stovetop on Med High Heat & Sear the steak for 2 minutes on both sides using TONGS that way you don't let the juices out.
3) Transfer Cast iron pan back to oven and roast 8-9 minutes for medium rare 10-11 for medium 12-13 medium well and 14-15 for well done
4) Let the steaks rest 5 min before serving
I gaurantee that you will have perfect steak using this recipe! Bon Appetite!
