Sumptuous Side Dish for Your Baller- Sweet Potoato Souffle


Ladies,

I often hear from women they need something to make with their main course. They are sick of the same old rice, potatoes etc. I was thinking of what to make with the steak I have marinading at home and instead of a regular baked potato of french fries I decided to make a family favorite during the holdiays Sweet Potato Souffle. When I am cooking for family I use the whole recipe but when I am cooking for two I halve this recipe and instead of using a casserole dish I use lil ramekin baking dishes for individual size servings. Bon Appetite!



INGREDIENTS
6 sweet potatoes
1 cup white sugar
1/2 cup milk
1/2 cup melted butter
1 teaspoon vanilla extract
2 eggs, beaten
1/2 teaspoon salt
1/2 teaspoon of cinnamon (optional)
1/2 teaspoon nutmeg (optional)

1 cup dark brown sugar
1/3 cup all-purpose flour
1/3 cup melted butter
1 cup chopped pecans



DIRECTIONS
1)In a large stockpot, cover sweet potatoes with 1 inch of water; boil for 20 minutes, or until fork tender. Drain, allow to cool and remove skins. ( i prefer to bake my potatoes it is something my mom & grandma do says the potatoes have better flavor. )

2)Preheat oven to 350 degrees F (175 degrees C). Grease or butter one 2 quart casserole dish.
Place potatoes in a mixing bowl and with an electric mixer, beat on low speed until potatoes begin to break up. Increase speed to medium high and blend until smooth.

3)Reduce speed to low and add sugar, milk, butter, vanilla, eggs, cinnamon, nutmeg and salt. Mix well.
Allow any potato 'fibers' to remain on the beater and remove. Pour sweet potato mixture into the casserole dish.

3)Prepare the topping in a small bowl by whisking together the brown sugar, flour, butter and pecans. Sprinkle mixture over potato mixture and bake for 40 minutes. (If you use the ramekins you can cut baking time to 20-25 min)

thanks siren i love when you put up your recipes - they are always new takes on really easy, traditional dishes, and never too difficult to get ingredients/prepare. just one question - you mention on the first step that you like baking your potatoes. is this an alternative to boiling them?

Eva yes you can bake instead of boiling. Boiling is fine I personally prefer baking it just takes a little more time. I am glad you enjoy my recipes! I love the feedback you ladies give em...it motivates me!

Hey: I know how to make this! I can finally say you posted a dish I know how to make (besides the Vietnamese spring rolls). I learned how to make it after having the version from Honey Baked Ham.

I too prefer to bake the potatoes, it really helps the flavor. I'm not big on sweet potatoes, but this is a great dish to serve.

It's such a kind and smart thing you are doing by posting recipes for the ladies. Wasn't it Ciara who just lost Fifty Cent for several reasons, but one reason specifically being Fifty Cent walking into a house that he put Ciara up in to find out that there was NO FOOD in the house!! After her album flopped, He bought her two expensive cars and put her up in a house and she can't have a brother's food ready when he comes to town?? Please! Hopefully this is a lesson learned! Keep posting those recipes mama! Good job..good job...

haLMAO @ Asha... Girl my cooking keeps mine coming home... I try to share what i know.. I think more women should cook not just for the men in their lives but for their children & themselves. Knowing how to cook is essential to me I am grateful to my mother , father ( yeah Pops throws down!), grandma, aunts, sister and friend ( shout out to Boss!) for sharing their gift of cooking! I have many friends who have not been able to cook I do my best to teach them all a go to dish. I hope all the ladies on BA give at least one of my recipes a try...

This looks good, I like pineapples, apples and raisins in mine and marshmallows on top, I call it Sweet supreme potatoes! But i like the crunchy look on top. I'mma try it
